Spanish Recipes - Parmesan & Gouda Salad with Olive Oil Ice Cream
This new-wave Spanish recipe was contributed by our friends at the fabulous Teté restaurant, located in Spain’s beautiful capital, Madrid. Teté is run by the very charming Jaime Trabuchelli, with Iván Álvarez at the healm in the kitchen. Located in the emblematic Madrid neighborhood of Malasaña, on a pretty narrow street, Teté is a gem of a place. The decor is lovely and relaxed. Upon arrival, you are given your menu, which is made of exquisite rice paper, and comes in a large rice paper envelope. Take out the menu, and be tempted by the original and tasty concoctions such as Rissoto with grilled shrimp and chopped walnuts, calamari sorbet and succulent baby lamb. This recipe of Parmesan & Gouda Salad with Olive Oil Ice Cream is the perfect beginning to any gourmet meal. The olive oil ice cream is surprisingly delicious!
Ingredients
- “Loio Rosso” lettuce
- “Trocadero” lettuce
- “Hoja de Roble” lettuce
- Parmesano cheese
- Cured Gouda cheese
- Olive oil ice cream
- Olive oil
- Balsamic vinegar
- Salt
- Pepper
- Sugar
Preparation
Wash and disinfect the various lettuces with bicarbonate. Then chop them up into medium pieces. Next, place them in a vessel, dressing them with the balsamic vinegar, the olive oil, the salt, the pepper and a bit of sugar (mix the dressing separately). Cut the two cheeses into thick shavings with a cheese grater. Place a scoop of olive oil ice cream on the plate. Next, cover the decorative dish with plenty of the salad leaves. Founded by Josep Maria Raventos and his son Manuel Raventos Negra, this 90 ha single "Pago" "estate" is in Sant Sadurni d'Anoia, between the coastal hills and Monserrat, 40 km west of Barcelona, within the DO Penedes region. The Raventos family and Codorniu family ties go back to the 15th century, and the beautiful Modernista Codorniu winery is literally located across a narrow street from Raventos. Manuel Raventos, the managing director and heir, grew up in the Codorniu mansion. Sr. Raventos decided to go solo, producing a small production (only 200,000 bottles per year, compared to Codorniu, who have 100 million bottles in stock at any given time) of super deluxe Cavas that could rival any premium Champagne (such as Roederer, Clicquot).
